This recipe is adapted from my book entitled "Raw Food and Hot Yoga" which is available on my website at http://www.beautifulonraw.com It uses the best of summer produce to create a refreshing and mouthwatering salad that can be used as a main course or side dish. Spruce it up with extra veggies and spices as desired.

Savemilo2005 3 months agoWould do again I added cayenne pepper and omitted the cumin. Added more salt and cooked the corn.
maleen 4 months agoI didn't exactly add the right amount out spices I just sort of winged it but overall it was delicious

Jabena 1 year agoDelicious and easy to make. Great summer salad. I add a pinch of sugar if the corn is not sweet.
