Crumble cheese in a medium mixing bowl, add yolks and stir until combned. Add drained and cooled chorizo to the cheese mixture. Mix until all ingredients are well incorporated. Heat 1/2 inch oil in a 12 inch heavy skillet over moderately high heat until thermometer registers 350. Scoop a 1 1/2 tbs mound of queso fresco mixture into bread crumbs, turning to coat completely, then pat into a 1/2 inch-thick oval with your hands. Fry until golden brown, about 1 1/2 to 2 minutes per side. Drain on a paper towel and serve while still warm. Serve with salsa or
Cilantro Cream Dippng Sauce:
1 cup Cacique Crema Agria
1/4 c cilantro finely chopped
2 minced green onions
4 teaspoons lime juice
1/4 tsp salt
1/4 tsp freshly ground pepper
Mix all ingredients together and refrigerate for atleast 30 minutes.
