| 2 smallonions |
| 2 mediumcarrots |
| 4 roma tomatoes |
| 4 stalkscelery |
| 2 cupsrotini |
| 2 cupsbaby spinach |
| 1 cancanelli beans |
| 1 cankidney beans |
| 1 canblack eyes peas |
| 1/2 cupbasil pesto |
| 2 boxesvegetable broth; 32 oz |
| 4 cupswater |
| 1.5 teaspoonminced garlic |
| 1/3 cupparmesan |
| 2 dashesrosemary |
| salt |
| pepper |
Three Bean Minestrone Preparation
Wash and chop potatoes, onions, carrots, tomatoes and celery.
Bring vegetable broth and water to boil and add chopped vegetables and garlic. Add salt to taste.
Simmer vegetables until tender. Add rosemary.
Add rotini and cook for 10 minutes or until al dente.
Add beans, spinach, pesto, and parmesan. Simmer a few more minutes.
Add salt and pepper to taste.
