Pasta Salad with Chicken, Olives and Grapes
Original recipe makes 6 Servings
| 8 oz.of corkscrew or rotelle pasta; (half a box) |
| 1/3 cupof finely chopped red onion |
| 1/2 cupof thinly sliced celery |
| 1 1/2 cupsof red or black seedless grapes; if available cut in half |
| 1/3 cupof walnuts; toasted and chopped |
| 2 cooked chicken breasts; (or any leftover roast chicken) |
| Dressing: |
| 1/3 cupof orange juice |
| juice; of 1 lemon |
| 1 tablespoongrainy mustard |
| 3 tablespoonsof rice wine vinegar |
| 1/4 cupof olive oil |
| salt; & pepper |
| 1/2 cupFeta cheese |
| 1/2 canolives; sliced in big chunks |
Pasta Salad with Chicken, Olives and Grapes Preparation
Mix dressing ingredients, chill, put all your items together, mix with chilled dressing, toss, top with feta.
