This combination of flavors feels like fireworks on your tongue. It's a refreshing side dish in summer - or works as a main with a bit of baguette for soaking up the dressing
Wash and slice cucumber (or peel it if you prefer).
Dice melon and mix.
Whisk together the juice of the lime, mint, cilantro, chives as well as salt and pepper to taste for the dressing.
Leave to marinate and chill in the fridge for at least 30 mins. to get the best of the flavor.
Note: Instead of cilantro you can also use another 1/2 handful of mint and vice versa.
Piel de sapo melon might be substituted by any other kind.
