Original recipe makes 4 Servings
1 pkgTofu; organic extra firm cut in 1/4 in slices
1/3 cupSoy ginger sauce; organic
1 tablespoonHoney
3 Mandarin Oranges; peeled, seeded, and thinly sliced
1 tablespoonExtra virgin olive oil
1 tablespoonGarlic; minced
2 cupsBroccoli Florets; fresh
2/3 cupWater chestnuts; canned, sliced
1 pkgBrown rice; steamed

Mandarin Orange and Ginger Baked Tofu Preparation

Preheat oven to 400F. Brush both sides of tofu slices with sauce and arrange in a 6 x 9" baking dish, overlapping as needed. Mix sauce with honey and spoon on top of the tofu. Top with orange slices. Bake 30 min, or until the tofu is lightly browned. In a large saute pan or wok, heat olive oil and saute garlic until lightly browned. Add broccoli and water chestnuts and cook until crisp tender. Serve over rice with baked tofu and additional sauce on the side.
