Pork with plums, coriander, soy sauce and spring onions
Ingredients
| 10 Plums |
| 2 Star anise |
| 2 tablespoonsolive oil |
| 2 piecesginger; thumb sized, peeled and finely grated |
| 2 cloves |
| 2 heaped tablespoonsbrown sugar |
| 600 gramspork |
| 1 handfulfresh coriander |
| 3 spring onions |
| soy sauce |
Pork with plums, coriander, soy sauce and spring onions Preparation
Cut plums into 1cm dice.
Heat oil, and fry star anise, ginger and cloves for 1 minute.
Add plums and sugar with 2 tablespoons of water, put a lid on and simmer for 20 minutes.
Pound pork until as thick as 3 beer mats.
Season the sauce and add half the coriander. Spread on the pork and roll up.
Steam pork for 10-15 minutes.
Serve on bed of finely chopped spring onions, with the rest of the coriander and lots of soy sauce.
