Pork with plums, coriander, soy sauce and spring onions Preparation
Cut plums into 1cm dice.
Heat oil, and fry star anise, ginger and cloves for 1 minute.
Add plums and sugar with 2 tablespoons of water, put a lid on and simmer for 20 minutes.
Pound pork until as thick as 3 beer mats.
Season the sauce and add half the coriander. Spread on the pork and roll up.
Steam pork for 10-15 minutes.
Serve on bed of finely chopped spring onions, with the rest of the coriander and lots of soy sauce.
