Sift the flour, baking powder and salt together
Ceam the butter and sugar til light and fluffy
Beat in the eggs, one at a time
Fold in half the flour, then fold in the milk, then the remaining flour
Fold in the bourbon and vanilla.
Pour into 2 lightly greased and floured 9 inch loaf pans (23cm) and run the blade of a knife through the batter in an X pattern from corner to corner to eliminate air bubbles.
Place pans in the center of a COOL oven, leaving space btw them. Turn the oven to 325 and bake for about an hour, until a tester comes out clean.
Turn off the oven and let the cakes cool in the oven for 10 minutes. Open the oven door and let the cakes cool in the open oven for 30 minutes. Turn the cakes out onto a wire rack and cool completely before slicing
This recipe starts in a cool oven to allow the batter to come up to temperature gradually. This will cause the cooking time to vary depending on how fast the oven heats, so it is important to check the cake for doneness and watch carefully towards the end.
