Spinach and Feta Brown Rice Preparation
Spray a non-stick skillet with olive oil cooking spray. Set over medium heat and add onion and garlic. Cook, stirring occasionally for four to six minutes or until tender. Add rice and spinach and cook stiring constantly for five minutes or until spinach is wilted. Stir in the feta chees and season with salt and pepper. Serve immediately.
Yields: generous 1/2 cup per serving
Start cooking the rice prior to chopping the vegetables. That way, the rice will be cooked to go in the pan by the time you're ready for it.
