Mexican Meatloaf with Lime and Chipotle Tabasco Sauce

Who says that meatloaf must only lurk as some mystery processed food slung by disgruntled cafeteria ladies? This dish puts a spicy twist to an old favorite--and lasted exactly 1m30s.

Ingredients
| 1 1/2 lbsground beef |
| 6 ozchorizo; ground |
| 1 1/2 cupsoatmeal |
| 2 Eggs |
| 1/2 cupmilk |
| 1/2 cupchipotle sauce |
| 2 tbspchipotle chili powder |
| 1 1/2 tbspcumin; powdered |
| 1 1/2 tbspcilantro; dried |
| 1 tspWorcestershire sauce |
| 1 tbspchipotle tabasco sauce |
| 1 tsplime juice |
| 3 jalapenos; canned; minced |
| 1/4 cuponion; minced |
| 1/4 cupred pepper; minced |
| 1 pinchsalt |
| 1 pinchpepper |
| 2 ozsalsa casera; canned |
Mexican Meatloaf with Lime and Chipotle Tabasco Sauce Preparation
1. Preheat oven to 350 F.
2. Mix all ingredients except salsa casera together in a large mixing bowl
3. Pour mixed ingredients into a greased/oiled 9" loaf pan (I prefer to spray it with olive oil). Lightly press mixture into pan and level the top with a spatula.
4. Spread salsa casera over the top.
5. Bake for 1hr - 1h15m.
Notes
(Note: This gave me enough not only for the main recipe but also enough to freeze about half a pound of the mixture for later use.)
