| 2 limes; ends and seeds removed, chopped |
| 2 tbsp kosher salt |
| 1 mango; halved and peeled, cut into 1/4 inch cubes |
| 1/4 small onion; thinley sliced |
| 1/2 cup cider vinegar |
| 1/4 cup raisons |
| 1/4 cup brown sugar |
| 1/2 tsp red pepper flakes |
| 1 tsp powdered mustart |
| 1 tsp ground ginger |
Mango-Lime Chutney Preparation
In a small jar, submerge limes in 1/2 cup water
season with 2 tbsp salt
seal and chill overnight
In a saucepan, bring limes and remaining ingredients to a boil; cook at least 10 min or until thickened.
Let cool at least 2 hours before serving
