3 poundsgreen peanuts in the shell; rinsed until clean
2 cupsZatarain's crab boil powder; (NOT liquid)
10 - 12 cupswater

Hot Boiled Peanuts Preparation

In a large pot (8-quart or more), mix the crab boil powder into half the water. Add peanuts, and top with more water to cover. Leave at least 2-3 inches of headroom so it won't boil over.

Bring to a boil, then reduce to a lively simmer for 4 hours. Stir the peanuts occasionally so that they cook evenly. Remove a peanut from the middle of the pot and crack open the shell. If the nut inside is tender, remove the pot from the heat. If the nut inside is not tender, continue cooking, testing periodically until desired tenderness is achieved.

If the nuts are tender before they taste spicy enough, leave them soaking in the crab boil water longer. The longer they sit, the hotter they get!

Drain the peanuts and serve warm, with lots of napkins and the cool beverage of your choice.

Refrigerate leftovers in a sealed container. May be reheated in the microwave or eaten cold.
