Quick and easy grilled veggie pizza but full of flavor using fresh ingredients
Start off my grilling the sliced zucchini, summer squash, onion, and tomatoes in just a little bit of olive oil. You can grill them on a charcoal grill or I just did them in a cast iron grill pan. After veggie are grilled allow them too cool for a minute and then toss them in with the pesto. Set aside. Mix the goat cheese and cream cheese together. Then take the store bought pizza crust and roll it out thin. Separate into two pieces so you will have to small individual pizzas. Place the crust directly onto the rack of a charcoal grill. Allow to cook for approximately three minutes (depending on how hot your coals are). It should be cooked on the bottom before flipping. Flip over and spread cream/goat cheese mixture onto the crust. Then top with the grilled veggies. Cook for another three minutes. After removing garnish with freshly chopped basil.
Measurements do not have to be exact. This recipe is very simple but full of flavor.
