Cucumber Cups (Garden Fresh Salads & Vegetables)
Sliced cucumbers are transformed into this refreshing and delightful salad cup. Try them with any of your favorite salads. Serve best with Fresh Shrimp and Pasta Salad (see recipe).

Cucumber Cups (Garden Fresh Salads & Vegetables) Preparation
In small bowl, soak gelatin in cold water until softened. Bring lemonade to a boil in small saucepan. Add to gelatin; stir to dissolve. Add sliced cucumbers to hot gelatin mixture. Let soak 5 to 10 minutes or until cucumbers are soft and pliable. Place one cucumber slice in bottom of each of six 10oz custard cups. Place 9 slices around edge of each cup, overlapping slices. Place 2 additional cucumber slices on bottom slice, making sure bottom slices touch cucumber slices around edge of cup. Spoon 2 to 3 tablespoonfuls gelatin mixture gently over all cucumber slices. Freeze 1 to 1-1/2 hours or until firm*.
To serve, dip bottom of custard cup in warm water until cucumber cup softens slightly on bottom. Gently run knife around edge of cup to loosen cucumber slices from edge. Place cucumber cup on lettuce lined plate. Fill with your favorite salad. Each cup holds about 3/4 cup salad.
Tip: *To freeze cucumber cups up to 1 week, place in heavy-duty plastic bags; seal.
