Original recipe makes 7 Servings
DRESSING
8 ozlemon yogurt
1/2 cupmayonnaise or salad dressing
1 teaspoonlemon peel; grated
1/4 teaspoonsalt
1/4 teaspoonpepper
1/8 teaspooncurry power
SALAD
3 cupscooked brown rice; (1 cup uncooked)
2 cupscooked turkey; cubed
1 cupcelery; sliced
1/2 cuppeanuts; chopped
1/2 cupraisins
1/4 cuponion; chopped
8 oz canpineapple tidbits; in own juice, drained
Lettuce leaves

Curried Turkey and Rice Salad (Garden Fresh Salads & Vegetables) Preparation

In small bowl, combine all dressing ingredients; blend well. In large bowl, combine all salad ingredients. Spoon dressing over salad; toss gently. Refrigerate 1 hour until thoroughly chilled. Serve in lettuce leaves; garnish with additional chopped peanuts and lemon peel, if desired.
