|1/2 cupmayonnaise or salad dressing|
|1 teaspoonlemon peel; grated|
|1/8 teaspooncurry power|
|3 cupscooked brown rice; (1 cup uncooked)|
|2 cupscooked turkey; cubed|
|1 cupcelery; sliced|
|1/2 cuppeanuts; chopped|
|1/4 cuponion; chopped|
|8 oz canpineapple tidbits; in own juice, drained|
Curried Turkey and Rice Salad (Garden Fresh Salads & Vegetables) Preparation
In small bowl, combine all dressing ingredients; blend well. In large bowl, combine all salad ingredients. Spoon dressing over salad; toss gently. Refrigerate 1 hour until thoroughly chilled. Serve in lettuce leaves; garnish with additional chopped peanuts and lemon peel, if desired.
