There are two types of rice vinegar. Chinese rice vinegar has a sharp, tangy flavor, and Japanese rice vinegar has a smooth, mellow, almost sweet taste. Either vinegar tastes great in this salad.

Original recipe makes 6 Servings
SALAD
2 cupscooked pork; thin strips
1/2 cupcashew halves or pieces
2 carrots; cut into matchstick pieces, about 1 cup
1 stalkcelery; cut into matchstick pieces, about 3/4 cup
1 bunchgreen onions; sliced into 1/2 inch pieces, about 1/2 cup
Fresh Spinach Leaves
DRESSING
1/3 cupoil
1/4 cuprice wine vinegar or white vinegar
2 tablespoonssoy sauce
1 teaspoonginger
1/4 teaspoonpepper

Oriental Pork Salad (Garden Fresh Salads & Vegetables) Preparation

In medium bowl, combine all salad ingredients except spinach. In jar with tight-fitting lid, combine all dressing ingredients; shake well. Pour half of dressing over salad mixture; toss gently to mix. Serve on spinach lined plates. Pass remaining dressing.
