Oriental Pork Salad (Garden Fresh Salads & Vegetables)
There are two types of rice vinegar. Chinese rice vinegar has a sharp, tangy flavor, and Japanese rice vinegar has a smooth, mellow, almost sweet taste. Either vinegar tastes great in this salad.

|2 cupscooked pork; thin strips|
|1/2 cupcashew halves or pieces|
|2 carrots; cut into matchstick pieces, about 1 cup|
|1 stalkcelery; cut into matchstick pieces, about 3/4 cup|
|1 bunchgreen onions; sliced into 1/2 inch pieces, about 1/2 cup|
|Fresh Spinach Leaves|
|1/4 cuprice wine vinegar or white vinegar|
|2 tablespoonssoy sauce|
Oriental Pork Salad (Garden Fresh Salads & Vegetables) Preparation
In medium bowl, combine all salad ingredients except spinach. In jar with tight-fitting lid, combine all dressing ingredients; shake well. Pour half of dressing over salad mixture; toss gently to mix. Serve on spinach lined plates. Pass remaining dressing.
