There are two types of rice vinegar. Chinese rice vinegar has a sharp, tangy flavor, and Japanese rice vinegar has a smooth, mellow, almost sweet taste. Either vinegar tastes great in this salad.

| 2 cupscooked pork; thin strips |
| 1/2 cupcashew halves or pieces |
| 2 carrots; cut into matchstick pieces, about 1 cup |
| 1 stalkcelery; cut into matchstick pieces, about 3/4 cup |
| 1 bunchgreen onions; sliced into 1/2 inch pieces, about 1/2 cup |
| Fresh Spinach Leaves |
| DRESSING |
| 1/3 cupoil |
| 1/4 cuprice wine vinegar or white vinegar |
| 2 tablespoonssoy sauce |
| 1 teaspoonginger |
| 1/4 teaspoonpepper |
Oriental Pork Salad (Garden Fresh Salads & Vegetables) Preparation
In medium bowl, combine all salad ingredients except spinach. In jar with tight-fitting lid, combine all dressing ingredients; shake well. Pour half of dressing over salad mixture; toss gently to mix. Serve on spinach lined plates. Pass remaining dressing.
