Unique chips with parsnips instead of potatoes
1) preheat oven to 350. Peel parsnips and cut off the ends. Then cut parsnips into thin slices, similar size.
2) Line a baking sheet with parchment paper. Lay parsnips on top and sprinkle with olive oil, salt and pepper.
3) Roast for 15 minutes, then turn slices over and roast for 10 more minutes. Turn again and roast for a final 5 to 10 minutes until golden.
