A delicious, 5 ingredient, bar-type cookie introduced to me by a friend from England. Great to carry on hikes and bike rides!
Preheat oven to 350F. Grease 13X9X2 baking pan. Combine first 3 ingredients in saucepan on stove top, stirring until butter/margarine is melted, sugar is dissolved and mixture is smooth. Remove from heat. Add oats and salt. Stir until oats are evenly coated. Dump mixture into prepared pan & spread into an even layer.
Bake for 20-25 minutes, depending on your oven. This is the only tricky part of this recipe. If you bake the cookies for too long, they'll be HARD AS ROCKS when they cool. Remove from oven when top is golden even though mixture still looks a little "loose". Cookies will set up as they cool.
Cool for 5-10 minutes, then cut into rectangles, squares or triangles, depending on how many servings you desire. Let cool completely before serving.
