Beef Stroganoff- Unbelievably easy! (Kid-Friendly, Alcohol-Free)

This is a kid-friendly version of beef stroganoff that is a huge hit with families, and yet doesn't resort to the "Hamburger Helper" mess.

I don't cook food with alcohol, so this is NOT an authentic version of the recipe, but it tastes just as good, and kids will love it, too. :o)

I also added one cup of spinach to this recipe. It's hard enough trying to get kids to eat veggies, (that's why all the veggies in this recipe are finely chopped) let alone spinach. I added it to increase their veggie intake and because it's easily disguisable in this menu, as it doesn't alter the taste.

Original recipe makes 6 Servings
1-2 lbsthin cubed steak; (I buy mine precut to save time)
1 cancondensed mushroom soup; (I prefer the soup that is NOT CREAM of mushroom)
1 cupmushrooms; finely chopped
1/2 cuponion; finely chopped
1 tablespoonworchestershire sauce
1 cupspinach; finely chopped
1 cubebeef or veggie boullion
1/2 tsppaprika
1/2 cupsour cream
3-5 cupscooked egg noodles
1 1/2 cupswater; or use 1 emptied soupcan's worth

*DIRECTIONS*

Brown beef until it is no longer pink over medium low to medim heat.

When beef is almost done browning, add chopped onion and stir frequently.

If you didn't get a lean cut of meat, drain the fat.

Add condensed mushroom soup, 1 soup can of water, paprika, worchestershire sauce, and mushroom.

Bring to a boil, then reduce heat to low and cover for about ten minutes.

Turn off heat, then stir in parsley and spinach.

Add sour cream and stir until smooth and creamy.

Serve over egg noodles or stir noodles in before serving.

*LOWER FAT / CHOLESTEROL VERSION*

For those of us that are on more restrictive diets, you can change these ingredients:

Get a leaner cut of meat, and reduce amount of meat used.

Drain and then rinse off meat before adding other ingredients.

Use lower sodium mushroom soup. Not the CREAM of mushroom soup (this one is "golden")

Reduce worchestershire sauce to 1/2 tablespoon.

Omit boullion.

Opt for "no yolk" egg noodles, as they don't have cholesterol.

Omit sour cream.

*NOTE: omitting sour cream will change the taste, and it will not taste like authentic stroganoff.

However, it still tastes unbelievably good without it. You may also use a fat-free sour cream.

Notes

You can ALWAYS add more mushrooms! My family doesn't happen to be mushroom lovers, so I only put in one cup and finely chopped them. If your family loves mushrooms, feel free to add another cup of them and coarsely chop them.

    I DID forget to add in when to put in the boullion! So sorry! I just add my boullion to the water, stirring it to disintegrate the boullion before I add it to the skillet. Thank you so much, Artolsav for catching that for me! Leaving the boullion out would account for the blandness. I hope you have a better experience next time, and I'm glad your family liked it! :)

    Good and easy! I made it with hamburger because it's what I had. The recipe leaves out when to add the bouillon, so I forgot to add it and it still tasted good. A little bland, but just fine with a bit of salt and pepper. Happily eaten by 1 year old, 4 year old and husband.
