Ambrosias Famous Christmas Cake
| 3/4 cThompson raisins |
| 12 Egg whites |
| 1 cGolden brown sugar |
| 3/4 cGolden raisins |
| 1/2 cCitron peel |
| 1/2 cGreen cherries |
| 1/2 cOrange and lemon peel |
| 4 cAll purpose flour |
| 1 tsBrandy extract and/or |
| 1 lbUnsalted butter |
| 3/4 cWalnuts; chopped |
| 12 Egg yolks |
| 1 cSweet shredded coconut |
| 1/2 cGlace cherries |
| 2 tsNutmeg |
| 3/4 cPineapple wedges |
| 1/2 cCurrants |
| 1/2 cPure apple juice |
| 1 cDark old fashioned brown |
| 3/4 cChopped dates |
| 3/4 cPecans; chopped |
| 1 tsBaking soda |
| 1/4 cBrandy |
| 1/2 cBlackstrap molasses |
| 3/4 cLexia raisins |
| 3/4 cSliced blanched almonds |
| 3/4 cMixed fruit |
| 1/2 cAssorted melon cubes |
| 2 tsCinnamon |
| 1 tsGround cloves |
Ambrosias Famous Christmas Cake Preparation
Mix fruit with 2 cups flour mixture. Heat oven to 275 degrees. line with wax paper and grease 6 loaf pans 8" x 4 1/2" X 2 1/2" deep. Beat butter and brown sugar until fluffy. Mix in egg yolks. Then mix in alternately just until smooth remaining flour mixture, juice and molasses. Turn into a large container and stir in fruit mix by hand. beat egg whites until soft peaks are formed and fold in to mixture. Bake for approximately 2 hours. yields 6 loaves Wrap well in foil. Can add brandy or rum at intervals. Decorations: Pineapple rings, maraschino cherries,pecans and or walnut halves marzipan, etc.... >From Ambrosia Natural foods recipe as posted in the Toronto Star.
