Marinade for Jerky
In a large bowl, combine the ale or lager with the soy sauce, worchestershire sauce and the 2 tblsp cracked black pepper.
Mexican Lime Jerky
1 large jalapenos, halved and seeded
1 cup fresh lime juice
1 quart light Mexican beer (Corona)
1/2 cup soy sauce
Coarse salt for sprinkling before drying.
In a mni food processor, puree the seeded pepper along with 1/4 v. of the lime juice. Transfer the puree to a large bowl. Stir in the beer, soy sauce, jalapeno mixture and remaining lime juice.
