A wonderful dish we like to use on speical occaisons. Each ingrediant compliments the other and it is sure to be a hit at your table
1. mince garlic
2. puree half the tomatoes in a food processor or blender
3. Dice remaining tomatoes into 1/2 inch peices
4. combine pureed and diced tomatoes in measureing cup (should have about 1 2/3 cups)
5. add reserve liquid to eaqual 2 cups
6. heat 1 tsp olive oil in large sause pan over medium-high heat. add chopped pancetta and cook untill crisp, 6 to 8 minutes. trasfer pancettato a bowl. can reserve oil from panchetta for next step
7. heat 2 tbsp oil in large sause pan over medium heat untill simmering.
8. add onion and tomato paste and cook, stirring constantlu, untill onions are light golden around the edges, about 3 minutes
9. add garlic and pepper flakes; stirring constantly, for about 30 seconds.
10. stir in tomatoes and 1/2 tsp salt
11. remove pant from heat and add vodka
12. return pan to medium-hi heat and simmer briskly untill alcohol flavor is cooked off (about 8 to 10 minutes) stir frequently and lower heat to medium if simmering is too vigorous.
13. stir in cream and cook untill hot, about 1 min.
14. while vodka sause is simmering, bring water to boil in pot, add 1 tsp salt and pasta. Cook pasta to just shy of al dente
15. Drain pasta and reserve 1/4 cup of cooking water
16. transfer pasta back to pot
17. add sause to pasta and toss over medium heat untill pasta absorbs some of the sause, about 1 to 2 minutes. add reserve cooking water if sause is to thick
18 stir in basil and panceta
19. serve in bowls and top with parmesan cheese
So that the sause and the pasta finish cooking at the same time, put the pasta into boiling water just after adding the vodka to the sause
Use only good vodka (i.e grey goose) bad vodka will taste harsh in this recipe
