This is a Terrific Soup....Kind of a mix between Mexican & American......It's GREAT served with Corn Bread & topped with Sour Cream & cilantro.....An absolute "Must Try".....Mmmmmmmm

1 lbGround Beef; Browned & Drained
1 cupOnion; Coarsely Chopped
2 clovesGarlic; Minced
2 (16oz) cansLight Red Kidney Beans; Rinsed & Drained
1 (15oz) canBlack Beans; Rinsed & Drained
1 (14.5oz) canPetite Diced Tomatoes w/ Jalapeno's; Undrained
1 (14.5oz) canDice Tomatoes w/ Mild Green Chiles; Undrained
1 (14oz) canBeef Broth
2 cupsYellow & White Whole Kernel Corn; Frozen
1 (1oz) envelopeTaco Seasoning Mix; (Taco Bell brand)
1/4 teaspoonSalt
1/4 teaspoonPepper
2 tablespoonsFresh Cilantro; Chopped

Southwestern Soup Preparation

1. Brown ground beef, onion, and garlic in a large Dutch oven over medium-high heat, stirring often, 10 to 12 minutes or until meat crumbles and is no longer pink and onion is softened; drain.

2. Stir in kidney beans, next 8 ingredients, and 4 cups water. Bring to a boil over medium-high heat. Cover, reduce heat to low, and simmer 30 minutes or until thoroughly heated. Stir in cilantro just before serving. Serve with desired toppings

Toppings: sour cream and chopped fresh cilantro

Notes

Also good with Mild Chili Beans( rinsed & drained) & in my opinion the Taco Bell brand seasoning seems to taste much better... Sour Cream on top & served is also GREAT.......
