7 eaCorn Tortillas
1/2 rollSausage; Jimmy Dean
1/2 cupCheddar; shredded
1/2 cupMonterey jack cheese; shredded
4 eaEgg; beaten
3/4 cupMilk
1 teaspoonChili powder
1/2 teaspoonSalt
1/4 teaspoonPaprika
1 teaspoonParsley
1 eaAvocado; sliced
1/3 cupSour cream

Brunch - Corn Tortilla Breakfast Pie Preparation

Preheat oven to 375?. Grease a pie pan. In a frying pan, cook sausage (or use bacon) and drain. Crumble the sausage.

Place 6 tortillas in a pie pan, around the edge overlapping and sticking out 1/2inch above the rim. Use the last tortilla in the center. Mix the sausage and cheeses. Spread over the tortillas. Spray with oil. Beat eggs, milk, chili powder, salt and paprika and pour over the ingredients in the pie pan. Top with parsley.

Bake 45min until eggs are set. Cut into wedges and serve with avocado slices on top and a dollap of sour cream.
