Nice recipe I got from my good friend from Chicago.
1. In large saute pan, cook the sausage over medium heat, separating it into small bite size pieces. Its done when the meat is no longer pink.
2. Rinse and drain.
3. Return sausage to saute pan and turn heat to medium low. Add celery, onion, green pepper and cook for 3-5 minutes.
4. In a large saucepan, bring water to boil.
5. Add the dry soup mix to the boiling water, reduce heat and simmer for 5 minutes until the noodles are done.
6. Stir in canned soup, uncooked rice and sausage mixture. Combine well.
7. Transfer to a greased 13" X 9" baking dish.
8. Cover with foil and bake at 350 degrees F for 40 minutes.
9. While casserole is baking, mix the bread crumbs and melted butter.
10. Sprinkle the bread crumbs over casserole and bake uncovered for 10 more minutes. Let stand for 5 minutes before serving. Yields: 12 servings (1 cup = 1 serving)
