An excellent, light, and refreshing dessert. Fresh fruit on a sugar cookie crust with an apricot preserve glaze.

Fruit Tart Preparation
Preheat oven to 375 degrees.
Spray a foil pizza pan (10" or 12 ") with cooking spray. Slice the sugar cookie roll into 1/4" thick pieces and lay on the pizza pan. Bake the crust for 2 minutes, or until brown, and then cool. Once cooled, place in the refrigerator to chill for 1 hour.
Mix the cream cheese, sugar, and vanilla together and then spread over the chilled sugar cookie crust. Slice fruit and layer over the crust.
Use water to thin the preserves as needed and then brush the preserves over the top of the fruit and chill until ready to serve.
