Wonderful Chicken Curry Salad

Serve on croissants or lettuce leaves. For a fancy presentation, line a platter with red leaf lettuce, and top with puff pastry shells that have been stuffed with salad (small shells for appetizers or large shell for main dish).

5 skinless boneless chicken breasts; cubed
1 cupmayonnaise
3/4 cupchutney
1 teaspooncurry powder
1/4 teaspoonpepper
2/3 cupsliced almonds
1 cupseedless grapes; halved
1/2 cupchopped green onions

Wonderful Chicken Curry Salad Preparation

In a large saucepan, simmer chicken breasts in water for about 10 to 15 minutes, or until cooked through. Drain, cool, and cube.

In a large bowl, combine mayonnaise, chutney, curry powder, and pepper. Stir in chicken, almonds, grapes, and onions. Chill.
