You have to give this recipe a try! Just about everyone has had some sort of lasagna at one time in their lives, but this one has such a great taste, it's quite different than the typical Italian style lasagna's you may have had, you'll enjoy this!

WHITE CREAM SAUCE
1/2 cupButter
8 tbspFlour
4 cupsMilk
5 Eggs Yolks
1/4 tspNutmeg
1 tspSalt
1 tspGround White Pepper
3/4 cupGrated Parmesan Cheese
PASTA
1 16 oz boxZiti
1 tbspOlive Oil
MEAT FILLING
1 tbspButter
1 1/2 lbsGround Beef
6 tbspTomato Paste
3/4 cupDry Red Wine; (not cooking wine, use a real red wine)
1/2 tspNutmeg
1 tspSalt
1 tspGround White Pepper
1/2 tspCinnamon
1/2 cupDry Breadcrumbs
1 1/2 cupGrated Kefalotiri Cheese; (or 1 cup Parmesan Cheese)
1 largeOnion; Finely Chopped

Pastitsio - Greek Lasagna Preparation

Make the Meat Filling: Preheat Oven 350°. Melt 1 oz. Butter in large skillet and saute chopped Onion until transparent. Add the Meat and cook until brown. Mix tomato paste with red wine and add to meat, cook adding nutmeg, salt, pepper and cinnamon. Cook about 15 minutes, take off heat. Cool and mix in ½ the breadcrumbs and ½ the grated cheese. Set aside, do not allow the meat to bulk up, keep it loose. Cook the Macaroni in boiling water with oil until soft, drain and set aside.

Start putting it all together: Grease a large baking Dish or lasagna pan. Sprinkle bottom of pan with bread crumbs and spread half of the pasta over the bottom and sprinkle it with ¼ cup of reserved cheese. Spread all of the meat mixture over the pasta.

Making the Sauce: In a med - small pot melt and cook ½ cup butter, 8 tbsp flour, 4 cup milk. Add egg yolks, nutmeg, salt, pepper and cheese. Keep stirring do not allow it to burn. Once nice and creamy set aside.

Finish putting it together: Pour half of the sauce mixture over the meat in the pan. Now place the rest of the pasta over the sauce and sprinkle it with Cheese. Pour the rest of the sauce mixture over it and smooth it out with a small spatula. Sprinkle top with bread crumbs and cheese. Cover top of pan, prevents pasta from burning, bake in preheated oven for 50 - 60 minutes.
