Original recipe makes 4 Servings
1/4 cupmild-tasting olive or nut oil
2 1/2 tablespoonsfresh lemon juice
1 1/2 tablespoonsfresh orange juice or dry red wine
1/3 cupfresh parsley, preferably flat-leaf; chopped
1 1/2 teaspoonsdried thyme leaves
1/2 bay leaf; very finely crumbled
1 clovegarlic; minced (optional)
1 teaspoonsalt
1/4 teaspoonground black or white pepper; or to taste

Citrus Herb Marinade Preparation

Combine in a dish and blend with a fork. Use immediately, or cover and refrigerate for up to 1 week.
