| 1/4 cupmild-tasting olive or nut oil |
| 2 1/2 tablespoonsfresh lemon juice |
| 1 1/2 tablespoonsfresh orange juice or dry red wine |
| 1/3 cupfresh parsley, preferably flat-leaf; chopped |
| 1 1/2 teaspoonsdried thyme leaves |
| 1/2 bay leaf; very finely crumbled |
| 1 clovegarlic; minced (optional) |
| 1 teaspoonsalt |
| 1/4 teaspoonground black or white pepper; or to taste |
Citrus Herb Marinade Preparation
Combine in a dish and blend with a fork. Use immediately, or cover and refrigerate for up to 1 week.
