Greek Chicken with Fresh Herbs
|1 PartsWhole Chicken; Best to buy chicken and cut into parts|
|1 HeadGarlic; Peeled and halved|
|1 Thinly slicedLemon; Slice thin and remove seeds|
|1 BunchMint; Washed and torn apart|
|1 BunchBasil; Washed and torn apart|
|1 BunchOregano; Washed and torn apart|
|2 TblsParsley; Chopped|
|3 TblsRosemary; Chopped|
|3 TblsExtra Virgin Olive Oil|
|1 To tasteSalt and pepper|
Greek Chicken with Fresh Herbs Preparation
Cut up your chicken into parts, breast, leg/thing combo and wings. Leave skin on and bone in for flavor.
Assemble in a baking dish and cover with herbs, lemon and garlic.
Drizzle olive oil over everything and add salt and pepper to taste.
Cover loosely with foil and throw in preheated oven at 450 for 15 min
Reduce heat to 350 and continue to bake until chicken is done (about 45 min)
Eat and enjoy.
Don't try to make some low fat version of this with no skin or bones, it will be very offensive to me!
