Caesar Dressing
Original recipe makes 4 Servings
| 1/2 cupExtra virgin olive oil |
| 6 clovesGarlic; minced and mashed |
| 1 tablespoonDijon mustard |
| 1 tablespoonVinegar; good quality white champagne |
| 2 tablespoonMayonnaise |
| Salt and pepper; to taste |
| Lemon juice; to taste |
| Anchovies; minced - to taste |
Caesar Dressing Preparation
Combine garlic, mustard, vinegar and two pinches of salt in a blender - mix thoroughly.
Add mayonnaise and blend to form a thick base.
If desired, add anchovy and blend to incorporate.
In a slow stream, add olive oil with blender running.
Season to taste with salt, pepper, and lemon juice.
Notes
Use anchovy paste rather than fillets for ease of prep.
