Caesar Dressing

Servings          
Original recipe makes 4 Servings
1/2 cupExtra virgin olive oil
6 clovesGarlic; minced and mashed
1 tablespoonDijon mustard
1 tablespoonVinegar; good quality white champagne
2 tablespoonMayonnaise
Salt and pepper; to taste
Lemon juice; to taste
Anchovies; minced - to taste

Caesar Dressing Preparation

Combine garlic, mustard, vinegar and two pinches of salt in a blender - mix thoroughly.

Add mayonnaise and blend to form a thick base.

If desired, add anchovy and blend to incorporate.

In a slow stream, add olive oil with blender running.

Season to taste with salt, pepper, and lemon juice.

Notes

Use anchovy paste rather than fillets for ease of prep.
