| 2 CansGreat Northern Beans; 15.8 oz |
| 4 CupsChicken Broth |
| 1 LargeRed Onion; Sliced Thin |
| 1 PoundTomatillos; Washed and Quartered |
| 4 Poblano Peppers; Washed and Chunked |
| 4 Anaheim Chiles; Washed and Chunked |
| 3 ClovesGarlic; Minced |
| 1 CupMarbled Cheddar Cheese; Shredded |
| 1 BunchCilantro; Chopped 1/2 Cup Reserved for Garnish |
| Corn Tortilla Strips; For Garnish |
| 2 TablespoonsOlive Oil |
| 1 TablespoonCumin |
| Sour Cream; Optional |
White Bean Chicken Chili Preparation
Sautee onions in olive oil over medium heat until softened. Add peppers and chiles and sautee for another 5 minutes. Add garlic and sautee until fragrant, about 1 minute. Add chicken broth, beans, cumin and toamatillos. Stir in shredded chicken. Simmer gently stirring occasionally for 45 minutes to an hour. Stir in cilantro 5-10 minutes prior to serving. Granish with sour cream, cheese and additional cilantro.
