White Bean Chicken Chili
|2 LargeBoneless Skinless Chicken Breasts; Poached and Shreded|
|2 CansGreat Northern Beans; 15.8 oz|
|4 CupsChicken Broth|
|1 LargeRed Onion; Sliced Thin|
|1 PoundTomatillos; Washed and Quartered|
|4 Poblano Peppers; Washed and Chunked|
|4 Anaheim Chiles; Washed and Chunked|
|3 ClovesGarlic; Minced|
|1 CupMarbled Cheddar Cheese; Shredded|
|1 BunchCilantro; Chopped 1/2 Cup Reserved for Garnish|
|Corn Tortilla Strips; For Garnish|
|2 TablespoonsOlive Oil|
|Sour Cream; Optional|
White Bean Chicken Chili Preparation
Sautee onions in olive oil over medium heat until softened. Add peppers and chiles and sautee for another 5 minutes. Add garlic and sautee until fragrant, about 1 minute. Add chicken broth, beans, cumin and toamatillos. Stir in shredded chicken. Simmer gently stirring occasionally for 45 minutes to an hour. Stir in cilantro 5-10 minutes prior to serving. Granish with sour cream, cheese and additional cilantro.
