Chicken breasts baked in a delicious Mexican sauce. Delicious and very easy to prepare.
Preheat oven to 375.
Place chicken breasts in 9 x 13 baking dish or large cassarole. In a bowl, mix salsa with red bell peppers, chili powder, cumin, garlic, and lemon juice. Pour over chicken. Pour black beans over the salsa and then top with cheese. Cover with foil and bake for 1 1/2 hours. Serve with rice.
This is so easy and the sauce is wonderful. If you like things spicier, use a medium or hot salsa and add some cayenne pepper to the sauce.
