Spinach & Cheese Ziti

This is based on a recipe of Rachel Ray's with some adjustments for our tastes. We left out the garlic, used lean ground beef instead of veal, and goat milk.

Original recipe makes 8 Servings

Spinach & Cheese Ziti Preparation

ZITI

Boil 1 bag ziti 8 minutes

drain

MEAT & VEGETABLES

Brown 1 lb. Hamburger and drain fat

Add 1 shredded carrot, 1 small onion diced, & 2T fresh sage, salt & pepper

Add 1 cup chicken broth to deglaze

Add 1 box spinach

SAUCE

Melt 3 T butter and wisk in 3T flour for 1 minute to make a rue

Wisk in 2 ? cups milk

Add a dash of nutmeg, salt, & pepper

Bring to a bubble and thicken

Reduce heat

Add 1 ? cups shredded Gruyere and 1 ? cups shredded parmesan

Combine ZITI, MEAT & VEGETABLES, & SAUCE

Pour into casserolle dish

Cover with 1 ? cups shredded Gruyere and 1 ? cups shredded parmesan

Bake for 30 minutes at 375.
