Slight twist on traditional popovers with the addition of chives
Preheat oven to 425 degrees.
Butter 20 muffins cups or popover tin. Mix all ingredients in a bowl.
Whisk until only tiny specks of flour remain, about 1 minute.
(Can be made 2 hours ahead. Store covered and let stand at room
temperature.)
Divide batter among muffin cups. Without opening oven door at any point,
bake popovers for 15 minutes. Reduce oven temperature to 350 degrees and
continue to bake until puffed, brown, and crisp, about 15 minutes longer.
Loosen popovers from pans. Transfer to a basket and serve hot.
