Originally found on foodnetwork.com, I make this recipe with a homemade fromage blanc, which is easy to do! It makes a great light and low-calorie dessert.

32 ouncesFromage Blanc
1/4 cupheavy cream
1/2 cupmesquite honey
4 teaspoonspure vanilla extract; Madagascar extract works well
1/2 teaspoonlemon zest; freshly grated
1 beanTahitian vanilla bean; scrape vanilla seeds freshly as you prepare recipe
12 ouncesfresh raspberries and blueberries
6 to 8 ounchesraspberry sauce; optional

Honey Vanilla Fromage Blanc Preparation

Stir the fromage blanc, cream, honey, vanilla extract, lemon zest, and vanilla seeds together in a medium bowl. Refrigerate until ready to use (I would allow approximately 24 hours for the cheese to absorb the flavors, but this is optional).

To assemble, spoon the fromage blanc mixture into shallow bowls. Place the fruit artfully on top and drizzle the dessert with raspberry sauce. Serve with extra raspberry sauce on the side. I find that some people like it less sweet with just a drizzle of sauce while others prefer more sauce. Optionally, you can serve the dessert with fresh fruit alone, which still results in a very balanced and delivious taste!

Notes

I make my own Fromage Blanc with a recipe from the book "Home Cheese Making: Recipes for 75 Homemade Cheeses" which can be found easily on Amazon.com, or many beer brewing stores. Fromage blanc is simple to make, you only need to follow the instructions on sanitization to make sure all goes well! Alternatively, some specialty stores will sell the cheese as well.

This recipe makes a very large number of servings, so you can safely half the recipe if you are not going to be entertaining a large party.
