Easy skillet corn bread
-Preheat oven to 370*
-Set corn on a baking tray and roast gently for around 10 mins
-Fry bacon slices in a skillet until crisp, remove and set aside
-Pour out 1/4 cup of the bacon fat and set aside, grease the skillet with the remaining fat
-Put all remaining ingredients, including the 1/4 of reserved bacon fat into a mixing bowl, mix with a spatula until smooth
-Chop bacon, roughly
-Pour batter into skillet and bake at 370* for 30 mins
-remove from oven and cut into squares, serve warm
