tuna patties
Mix Tuna, Eggs, onion, salt and pepper and 1/2 of cornmeal/breadcrumbs in a mixing bowl.
Make into 8 patties
sprinkle remaining cornmeal on outsides of patties
cover bottom of pan with oil (at least 1/2 deep) and heat at medium high
Cook patties in oil until brown on both sides
BEWARE - they will pop if oil is too hot.
place on paper towel or dish towel to absorb extra oil
I serve with mashed potatos and green beans
