Garlic Chicken with Bow-tie Pasta
Original recipe makes 4 Servings
| 1 Tablespoonolive oil |
| 1 poundchicken breasts; cubed |
| 1 teaspoonsalt |
| 1 Tablespoonolive oil |
| 8 cloves garlic; chopped fine |
| 8 oz.fresh mushrooms; quartered |
| 1/2 cupsliced green onions |
| 1 14 1/2-oz. can diced tomatoes; undrained |
| 1/2 cupchicken broth |
| 1/2 teaspooncrushed red pepper |
| 1/2 teaspooncornstarch |
| 1/2 teaspoonsalt |
| 2 cupsbowtie pasta |
| 1/4 cupchopped fresh parsley or cilantro |
Garlic Chicken with Bow-tie Pasta Preparation
Fry cubed chicken in 1 Tablespoon oil over medium heat until brown.
Sprinkle with salt. Remove from skillet and keep warm.
Cook garlic in oil until golden.
Add mushrooms and green onions. Cook 2 minutes.
Add tomatoes, broth, red pepper, cornstarch and salt. Heat to boiling.
Reduce heat and simmer 5 minutes. Remove from heat.
Combine chicken, hot mixture, pasta and parlsey/cilantro.
Notes
