Combine the first seven ingredients in a large stock pot. Bring to a boil and simmer for an hour.
To make the spaetzel noodles, combine the cup of flour, egg and salt in a small bowl (working it with your hand into little rivels of dough). Drop the rivels into a separate pot of boiling water. Constantly stir and simmer 5-6 minutes or until tender. Strain the water off and add the rivels to the simmering soup in the other pot.
