Blackened chicken with avocado salsa
Ingredients
Original recipe makes 4 Servings
| 2 teaspoonBlackened steak seasoning |
| 1 poundChicken breast |
| 1 tablespoonOlive oil |
| 2 tablespoonRice vinegar |
| 2 tablespoonOlive oil |
| 1/4 teaspoonCumin |
| Salt and pepper; to taste |
| 1 Avocado; halved, seeded and chopped |
| 2/3 cupPapaya; chopped |
| 1/3 cupRed bell pepper; chopped |
| 1/4 cupCilantro; chopped |
Blackened chicken with avocado salsa Preparation
Preheat oven to 375? sprinkle both sides of chicken with blacken seasoning. In a large skillet, add 1 tbs oil and cook chicken until brown, bake about 15 mins or until chicken is 170?
For salsa, add rice vinegar, 2 tbs oil, cumin, salt and pepper. Add avocado, papaya, pepper and cilantro.
