Shrimp Tacos

Original recipe makes 4 Servings
1 poundShrimp; peeled and deveined
2 Garlic; cloves, minced
3 tablespoonOlive oil
3 tablespoonLime Juice
1/2 teaspoonCumin
1/4 teaspoonCayenne pepper; optional
1 tablespoonCilantro; minced
Salt ~~amp pepper; to taste
1/4 teaspoonChipotles, canned in adobo sauce; or powdered chipolte pepper

Shrimp Tacos Preparation

Peel the shrimp while still semi frozen if possible. Make sure the vein is removed. Mix the olive oil, lime juice, cumin, garlic, cayenne pepper and cilantro in a bowl. Toss the shrimp in the mixture and let sit for about 15 minutes.

Cook shrimp on a hot grill pan until pink, about 2 minutes and then flip and cook 1 more minute.

Cilantro-Lime Sour cream

1/4 cup sour cream

2 tbs chopped cilantro

1/4 teaspoon cumin

juice and zest from one lime

1 small garlic clove, minced

Mix ingredients for sour cream and let sit until flavors combine.

Put shrimp in flour tortillas, top with chopped tomato, cheese, sourcream mixture.

    We all liked this. I doubled the recipe since I have two teenage boys. We did not think there was too much garlic, and I doubled the cilantro in the marinade, as well as adding lots more of the chipotle peppers. Also made double the sour cream sauce. We used white corn tortillas which helps to keep the shrimp flavor prominent.

    Used sautéed red and orange bell peppers rather than chipotle peppers, added 2 tablespoons of tequila in the marinade (highly suggest reducing the sauce down during the cooking though), and substituted Greek yogurt in the dressing, but loved this. Will definitely make again.

    I usually reduce the garlic in both parts of the recipe if the cloves are large. We love garlic in my house so it's not usually a problem. I also keep a freezer bag full of red and green chili peppers. I buy a bunch, and freeze them whole. It's the next best thing when they are out of stock at the grocery store!

    This recipe is fantastic! My kids loved it, too! I left the chilis out of the marinade simply because I didn't have any at the house, but it was still delicious. Also, I served them on white corn tortillas since they hold up better than flour when the contents are wetter. Wonderful recipe!!

    Follow up to my previous review, I would cut the garlic in half and maybe not include it in the sour cream mixture unless you want to be breathing garlic, I did love the recipe
