Spicy Tilapia with Pineapple Pepper Relish

| 2 tablespoonscanola oil |
| 3 tablespoonscajun seasoning |
| 1/4 teaspoonkosher salt |
| 1/4 teaspoonground red pepper |
| 4 (6 oz)tilapia fillets |
| 1 1/2 cupsfresh pineapple |
| 1/3 cuponion |
| 2 tablespoonsrice vinegar |
| 1 tablespoonfresh cilantro |
| 1 smalljalapeno pepper |
| 4 lime |
Spicy Tilapia with Pineapple Pepper Relish Preparation
1. Combine pineapple and next 4 ingredients (thru jalapeno) in a large bowl stirring gently.
2. Heat oil in a large nonstick skillet over medium-high heat.
3. Combine Cajun seasoning and salt and pepper in a small bowl.
4. Sprinkle fish evenly with spice mixture. Add fish to pan and cover, and cook for 2 minutes on each side or until fish flakes easily.
5.Serve pineapple mixture with fish. Garnish with lime wedges.
