Spicy Tilapia with Pineapple Pepper Relish

I don't use the ground red pepper posted. My favorite seasoning for this is Bayou Cajun Rub seasoning produced by Taste of Inspirations, found at Hannaford's.

2 tablespoonscanola oil
3 tablespoonscajun seasoning
1/4 teaspoonkosher salt
1/4 teaspoonground red pepper
4 (6 oz)tilapia fillets
1 1/2 cupsfresh pineapple
1/3 cuponion
2 tablespoonsrice vinegar
1 tablespoonfresh cilantro
1 smalljalapeno pepper
4 lime

Spicy Tilapia with Pineapple Pepper Relish Preparation

1. Combine pineapple and next 4 ingredients (thru jalapeno) in a large bowl stirring gently.

2. Heat oil in a large nonstick skillet over medium-high heat.

3. Combine Cajun seasoning and salt and pepper in a small bowl.

4. Sprinkle fish evenly with spice mixture. Add fish to pan and cover, and cook for 2 minutes on each side or until fish flakes easily.

5.Serve pineapple mixture with fish. Garnish with lime wedges.
