A simple stir fry that goes over great with kids. There were never any issues getting me to eat this when I was growing up, the smoked sausage is really the icing on the cake.
Saute vegetables in oil until tender. Add sausage, season (as you see fit, I suggest salt, pepper, garlic, and/or oregano), and heat sausage. Mix in 1/2 cup of parmesan cheese, serve over cooked rice, with remaining parmesan cheese on top.
