I've been tweaking the quantities and ingredients a bit to try and come up with the perfect healthy banana bread. I think this recipe turned out perfect.
Preheat your oven to 375. Beat the eggs in a bowl and add the vanilla extract. In a separate bowl mash the bananas. Add the bananas and apple sauce to the egg mixture. Optionally you can use to apples you've pureed in a food processor.
Combine all of the dry ingredients. Blend all of the ingredients together. Add the chocolate chips at the end.
Pour it into a greased bred pan, bake for 45-55 minutes.
Great dessert for kids lunches.
