Easy and quick cooking. Chicken is comes out very moist and tender.
Preheat oven to 450
Cut chicken breasts in half (so they are half the thickness).
Melt butter, add garlic & let cool slightly. Cover baking sheet with aluminum foil.
Crumble potato chips in food processor, or place in plastic bag and crush to fine crumbs. Mix in pepper. Place crumbs in bowl or plate.
Dip chicken into butter/garlic mixture. Press firmly into potato chip crumbs, until covered on both sides. Place on baking sheet.
Baking in 450 oven for 12-15 minutes until lightly browned. Cooking time for thicker pieces or pieces with bones is 30 to 40 minutes and will need to put on lower rack to prevent over-browning.
Key is to have thin pieces of Chicken. Either cut thick pieces or pound to thin.
