Heat oil to 350? Leave ricotta and gorgonzola out to reach rroom temp. Mix two cheeses together. Sprinkle about 1/2 tsp of thyme and freshly grated lemon zest into the cheese. Mix well. Pipe the cheese into the olives. Put into the flour, then dip in egg, finally in bread crumbs.
Put in oil and fry for about 45 seconds, until golden brown.
