Pecan Pie recipe.

"We made this recipe for Christmas and it was terrific! We had no problems with this simple recipe but did let it bake another five minutes in our oven. The pie had wonderful texture (congealed completely), great flavor and while very sweet...it was not too sweet. We served it warm with a scoop of vanilla ice cream and enjoyed it very much!" - sgrishka

Original recipe makes 8 Servings
3 Eggs; slightly beaten
1 cupcorn syrup
2/3 cupsugar
1/3 cupbutter or margarine; melted
1 tspvanilla
1 1/4 cupspecan halves
1 9 in.pastry shell or pie crust; store bought, or homemade crust (see my recipe for a crust here at bigoven)

Pecan Pie Preparation

1. preheat oven to 350 degrees.

combine eggs, corn syrup, sugar, butter, and vanilla. mix well; stir in pecan half and blend.

2. pour filling into unbaked pastry shell or pie crust. to prevent overbaking, cover edge of the pie with foil.

3. bake for 25 minutes, remove foil, return pie to oven for 25 more mintues.

4. remove pie from oven, let pie cool.

cover and refrigerate within 2 hours.

baking tip: bake the pie until the filling is set and puffs up in the center. check if the pie is set by giving it a gentle shake, the center should remain firm and a knife inserted in the center will come out clean.
