Watercress Salad with Mandarin Oranges, Walnuts and Gorgonzola
Ingredients
| 4 slicesWhole grain bread; cubed |
| 1 teaspoonCumin (ground) |
| 1 can (11 oz)Mandarin Oranges |
| 1 tablespoonWhite wine vinegar |
| 2 teaspoonsOlive oil |
| 1 teaspoonDijon mustard |
| 4 cupsWatercress (fresh) |
| 4 tablespoonsWalnuts; chopped |
| 4 tablespoonsGorgonzola or blue cheese |
Watercress Salad with Mandarin Oranges, Walnuts and Gorgonzola Preparation
Directions:
Preheat oven to 400 degrees. Arrange bread cubes on a baking sheet and spray with cooking spray. Sprinkle cumin over bread cubes. Bake 8-10 minutes, until croutons are lightly toasted. Set aside. To make the dressing, pour liquid from the can of mandarin oranges into a small bowl (approximately 1/2 cup) Whisk vinegar, oil and dijon mustard. Season with salt and black pepper. Arrange watercress on 4 individual salad dishes. Top with equal amounts of oranges, walnuts and cheese. Drizzle dressing over salad and serve.
