Original recipe makes 4 Servings
4 slicesWhole grain bread; cubed
1 teaspoonCumin (ground)
1 can (11 oz)Mandarin Oranges
1 tablespoonWhite wine vinegar
2 teaspoonsOlive oil
1 teaspoonDijon mustard
4 cupsWatercress (fresh)
4 tablespoonsWalnuts; chopped
4 tablespoonsGorgonzola or blue cheese

Watercress Salad with Mandarin Oranges, Walnuts and Gorgonzola Preparation

Directions:

Preheat oven to 400 degrees. Arrange bread cubes on a baking sheet and spray with cooking spray. Sprinkle cumin over bread cubes. Bake 8-10 minutes, until croutons are lightly toasted. Set aside. To make the dressing, pour liquid from the can of mandarin oranges into a small bowl (approximately 1/2 cup) Whisk vinegar, oil and dijon mustard. Season with salt and black pepper. Arrange watercress on 4 individual salad dishes. Top with equal amounts of oranges, walnuts and cheese. Drizzle dressing over salad and serve.
