Original recipe makes 6 Servings
1 poundRed beans; dried
7 cupsWater
1 Green bell pepper; chopped
1 mediumOnion; chopped
3 stalksCelery; chopped
3 clovesGarlic; chopped
1/2 poundAndouille sausage; sliced
3 tablespoonCreole seasoning
Hot cooked rice

New Orleans Red Beans and Rice Preparation

Soak beans overnight. Rinse and place in crockpot. Place all remaining ingredients, except rice, in crockpot. Cook on high for 7 hours. Serve over hot cooked rice.
